How to store cakes and desserts

Cakes and desserts are at their most delicious when fresh, but they are extremely rarely prepared immediately before serving. It usually takes at least several hours from the time they are made to the time they delight the palate of consumers. So how should these delicate confectionery products be properly stored in a patisserie or café, so that they keep their taste, texture and perfect appearance until they are served to customers? The answer is special confectionery display cases. In the RAPA range we have several variants of this furniture and devices. Refrigerated confectionery display cases

 

Some cakes and desserts require refrigerated storage to maintain their form and flavour. These include, above all, cakes with cream, whipped cream or fruit, roulades, cheesecakes and also light mousses. They can be stored for up to two days at a low enough temperature of between 3oC and 8oC. After this time, they may lose their shape and taste. While you wait for your customers, you can display them attractively in RAPA confectionery display cases: Excellente C, Excellente C L, C-A or C-B. Thanks to dynamic cooling and an air curtain to prevent a sudden influx of warm air when opening the display cabinets, they will ensure that your assortment looks beautiful and tastes delicious for as long as possible. 


 

 

 


Neutral confectionery display cases

 

Many sweet baked goods do not need refrigeration to keep the best of them for a long time. They can be stored for several days at room temperature, i.e. approx. 18oC . However, it is worth protecting them from drying out. This is why you can place shortcrust pastries, meringues, gingerbread, muffins or delicatessen cakes, as well as larger baked cakes such as Baumkuchen, poppy seed cakes, yeast cakes or flan cakes in the RAPA neutral display case (unrefrigerated): Excellente C LN or C-AN. The non-refrigerated display cabinets are also ideal for displaying yeast cakes, croissants, doughnuts or steamed pastry products. The large display space and convenient access to the assortment from the service side make them very handy and useful furniture in any patisserie.


 

 


 

Cash counters and bakery shelving

 

If you run a café or pastry shop you will need more than just display cases for pastries. You will also need complementary furniture such as shelving units, e.g. the RP-C, RP-A1, RP-B1 model, in which you can place products packed in foil or cardboard boxes, as well as cash counters at which you can comfortably pack your dough and serve your customers.
